a husband-and-wife team from Dublin, founded Ahascragh Distillery after years of travelling the world and experiencing diverse cultures. Motivated by a shared passion for craft Irish spirits, they returned home to transform their vision into reality, restoring a historic old mill in the village of Ahascragh, County Galway. Captivated by its heritage and community spirit, they built Ireland’s first zero-emissions distillery, combining traditional craftsmanship with pioneering sustainability practices such as renewable energy, heat recovery, and eco-friendly packaging. Supported by local people and a dedicated team, the McAllisters are redefining Irish whiskey and gin with a mission to create innovative, premium, and environmentally responsible spirits that honour tradition while shaping the future of sustainable distilling.
